Peynirli Poğaça (Cheese Pastry): A Traditional Flavor Journey

Peynirli Poğaça is one of the most beloved classics of Turkish cuisine. Made from yeast dough, it is soft on the inside and lightly browned on the outside, making it an indispensable part of breakfasts and tea times.

History

Poğaça derives its name from the word pogácsa in Hungarian cuisine. Entering the Turkish culinary culture during the Ottoman period, this delicacy was adapted to local palates over time. Enriched with fillings like cheese, olives, or minced meat, it has become the star of modern Turkish breakfast tables.

Recipe and Ingredients

For the Dough:

  • 1 cup warm milk

  • 1 cup warm water

  • 1 cup vegetable oil

  • 1 packet instant yeast (10g)

  • 2 tablespoons granulated sugar

  • 1.5 teaspoons salt

  • 2 eggs (whites for the dough, yolks for the top)

  • As much flour as needed (approximately 5-6 cups)

For the Filling:

  • 200g white cheese (feta) or curd cheese (lor)

  • Half a bunch of finely chopped parsley

For the Topping:

  • Egg yolks

  • Sesame or nigella seeds

Preparation Process

1.Yeast Activation:Takes about 5 minutes.

Mix the warm milk, water, yeast, and sugar in a bowl and let it sit for 5 minutes.

2.Kneading the Dough:Requires 45-60 minutes resting time.

Add the vegetable oil, egg whites, and salt. Gradually add the flour to knead a soft, non-sticky dough. Cover it and let it rise for 45-60 minutes.

3.Shaping:

Tear off tangerine-sized pieces from the risen dough. Place the cheese filling inside, close the dough over it, and arrange them on a baking tray lined with parchment paper.

4.Baking:

Brush the tops with egg yolk and sprinkle with nigella seeds. Bake in a preheated 180°C oven until the tops are golden brown (approximately 25-30 minutes).

Recipe Tips

  • Pro Tip: Having ingredients at room temperature and the milk warm (not hot enough to burn your finger) will accelerate the fermentation speed.

  • Softness: Covering the pastries with a clean cloth for 10 minutes right after taking them out of the oven will make them much softer.

Serving Suggestion

It is recommended to serve this with freshly brewed Turkish tea, accompanied by tomatoes, cucumbers, or black olives.

Frequently Asked Questions

Q: What should I do to keep my poğaça from getting hard?

A: Add the flour carefully and gradually; do not knead the dough until it becomes too stiff.

Q: Can I prepare my dough the night before?

A: Yes, preparing the dough and leaving it in the refrigerator overnight (cold fermentation) can actually enhance the flavor.

Q: What can I use instead of cheese?

A: Olive paste, potatoes, or a minced meat mixture are also very popular alternatives.

Q: How do I keep my poğaçalar fresh?

A: You can store them for a long time in airtight containers or in the freezer.

Zero Waste Note: Instead of throwing away stale leftover pastries, you can turn them into a “pizza-like” treat by adding a little more cheese and tomatoes and heating them in a sandwich press. Alternatively, you can cut them into small pieces and bake them to make croutons for your soups.
